
Recently our preschool co-op had Pancake Day, complete with pancake stories, songs, games and homemade pancakes. I was asked to share this recipe, so I thought I'd post it here on my blog.
Pancakes
1 egg
1 c. whole wheat flour (I fill my flour bin with a mixture of one bag of whole wheat flour and one bag of unbleached flour--this is what I use when a recipe calls for all-purpose flour)
3/4 c. milk
1 Tbsp. packed brown sugar
2 Tbsp. veg. oil
3 tsp. baking powder
1/4 tsp. salt
Beat egg until fluffy. Beat in remaining ingredients until smooth. For thinner pancakes, stir in additional 1 to 2 Tbsp. milk.
Heat griddle to medium heat or up to 375 degrees. Grease griddle with butter or margarine. Pour about 1/4 c. batter onto hot griddle. Cook both sides until golden brown.

I recently started mixing my whole wheat and white flour for added fiber. While it takes a little more liquid or melted butter, the results are great! Thanks for your ideas Jen :-)
